  1. 400 g echalion shallots, diced very finely,
  2. 230 g smoked bacon diced finely,
  3. 2 heaped tbsp soft brown sugar,
  4. 2 tbsp cider vinegar,
  5. Pinch sea salt,
  6. Cracked black pepper,
  7. 2-3 tbsp extra virgin olive oil for frying,
  8. Around 4 tbsp water

  1. Add around 2 tbsp olive oil to a saucepan. Once hot add in the chopped bacon. Fry over a medium high heat until it becomes crisp on the edges then turn the heat down to medium.
  2. Add in the shallots. Stir to coat in the oil, if you feel more oil is needed add some here so you're not dry frying as you don't want the onions to catch on the base of the pan. Fry over a medium low heat so the shallots don't burn and become bitter. Season with a small pinch of salt and penty of black pepper. Stir through. Once the shallots are softened add in the light brown sugar and stir through. Next, add the cider vinegar. This will add a bit of sharpness to balance out the sweetness.
  3. Once the sugar has melted down and the vinegar has cooked off a bit, the jam will look glossy and brown and be nice and thick. Add in the water to de-glaze the pan. Stir through well and simmer for a few minutes until the jam is thick and nicely caramelised. Remove from the heat to cool. Either eat right away or store in a sterilised jar in the fridge for up to two weeks. Enjoy! :)
