- 500 g strong bread flour, extra for dusting,
- 320 ml warm water,
- 6 tbsp olive oil,
- 7 g fast action dry yeast,
- 3 tsp dried rosemary,
- 2 tsp garlic powder,
- 2 tsp salt,
- 1 tsp sugar,
- To garnish before baking:
- 2-3 sprigs rosemary, woody stalks discarded, leaves removed,
- 1 tsp sea salt & garlic flakes. (I used Cornish sea salt co)

- In a large mixing bowl add the flour and then add the 2 tsp salt and 1tsp sugar to one side of the bowl and pour the yeast into the opposite side. Add the garlic powder and the dried rosemary.
- Mix everything together and then add 2 tbsp olive oil and pour in the warm water. Combine until a ball of dough is formed. Lightly dust your work surface with flour then turn out the dough. Leave to rest for five minutes. Prepare a large sided rectangular oven tin by oiling with 1 tbsp oil all over.
- Knead and stretch the rested dough for 2-3 minutes. Stretch it out a bit and place into the oiled tin. Now push and spread out the dough using your knuckles until it fits the tin as a large rectangular shape up to all the edges. Ensure there's no holes in the dough, if there are plug them up by tearing off a little piece of dough from elsewhere.
- Cover lightly with a cloth and leave in a cosy warm place to prove for 20 mins. Once the time has passed, drizzle over 3 tbsp olive oil, smooth it all over the dough and take your three middle fingers and press dimples down into the dough quite firmly. Do this all over in rows. Again cover and leave in a warm place to prove until doubled in size, this should take another 20-25 mins.
- Preheat your oven to 220 (fan). Again using your middle three fingers re-press the dimples in the same place as before. Take small sprigs of rosemary and stuff into some of the holes evenly across the surface. Take the garlic sea salt blend (or use plain sea salt flakes if you can't obtain this), and sprinkle it into each of the small dimples you made. Bake on the middle top shelf of the oven for 20 minutes or until the top is beautifully golden. Cool upon a wire rack then slice up and enjoy.
